BBQ Pork Spare RibsThis dish serves 4 people. You will need:- Blythburgh Free Range Pork spare ribs - 1oz (25g) butter - 1 onion, finely minced - 6tbsp (90ml) tomato ketchup - 1tbsp (15ml) Worcestershire sauce - 2tbsp (30ml) brown sugar - Juice of ½ lemon 1. Melt the butter and fry the onion until soft. Stir in the tomato ketchup, Worcestershire sauce and sugar. When dissolved stir in lemon juice. Bring to the boil and simmer for 5 minutes. 2.Arrange the pork ribs on a large baking dish and marinade in sauce for several hours or overnight in the fridge. 3. Barbecue or bake at 170 °C, 325°F, Gas Mark 3 for 1½ hours until ribs are dark brown, crisp and most of the sauce has gone. 4. Serve with green salad. |
